  6. Pour the mixture into a sterilised glass container. Refrigerate.

  • It is important to let homemade mustard sit for two days before using. The bitter taste will dissipate.
  • You can grind the mixture and add chiles, horseradish or other spices to make it spicier. You can also add honey and sugar to the mixture if you prefer a milder flavor.
  • You may not have to wait 12 hours if the mustard seeds absorb liquid quicker and plump up. It’s important to watch the mustard seeds. You can proceed to the next step if they absorb everything quickly.
  • Sometimes, the mustard seeds will not absorb the liquid in the first 12 hours. It is possible that you have a bad batch. Don’t worry! Drain the liquid and keep about 1/4 cup. Then, move on to the next step. It will also come together if you blend it longer in the processor.
  • We find that beer that has a good flavor, such as a Belgian Style wheat beer like Hogaarden or Hefeweizen, or a pale ales that is slightly lighter in taste like Sierra Nevada work well with this recipe. Bud light is too bland, while IPAs can overwhelm mustard. It’s not that we don’t like these options.
